The windows mist over, the kitchen smells wonderful, and for a little while, there is nowhere else you need to be.

Winter invites us to find warmth in small things: a favourite blanket, a conversation around the table, or a mug held between chilly hands. A simple meal can become part of that comfort, too.

These four recipes bring a little sunshine to cold days. There is a golden soup, a hearty stew, a warm apple dessert, and something chocolatey to sip afterwards. Nothing fancy—just familiar ingredients and food worth slowing down for.

1. Golden Butternut and Red Lentil Soup

Butternut soup feels like a little piece of home. Red lentils make this version more substantial and give it a creamy texture without needing cream.

Serves: 4–6 | Prep: 15 minutes | Cook: 35–40 minutes

Ingredients

1 tablespoon olive oil

1 medium onion, chopped

2 garlic cloves, finely chopped

1 teaspoon ground cumin

½ teaspoon ground ginger

750 g (about 1⅔ lb) peeled, deseeded butternut squash, cut into small cubes

150 g (¾ cup) dried red lentils, rinsed and drained

1.25 litres (about 5¼ US cups) vegetable stock, plus extra if needed

Black pepper and salt, to taste

120 ml (½ US cup) coconut milk or cream, optional

Method

Heat the oil in a large saucepan over medium heat. Add the onion and cook for 6–8 minutes, stirring, until softened.

Add the garlic, cumin, and ginger. Stir for 30 seconds.

Add the butternut, lentils, and stock. Bring to a boil, then reduce to a gentle simmer.

Partly cover and cook for 25–30 minutes, stirring occasionally, until the butternut and lentils are very soft. Add a splash of stock if the soup becomes too thick.

Remove from the heat. Blend carefully with an immersion blender until smooth. If using a jug blender, let the soup cool slightly and follow the blender’s instructions for hot liquids; work in small batches.

Stir in the coconut milk or cream, if using. Warm gently, taste, and season.

A little sunshine on the side: Serve with buttered toast or crusty bread. Gather-Round Chicken and Potato Stew

This is the sort of supper that belongs in the middle of the table, with bowls passed around and bread ready for the last of the gravy.

Serves: 4 | Prep: 20 minutes | Cook: 45–55 minutes

Ingredients

1 tablespoon olive oil

600 g (about 1⅓ lb) boneless, skinless chicken thighs, cut into 3 cm (1¼ inch) pieces

1 medium onion, chopped

2 medium carrots, sliced

2 garlic cloves, finely chopped

2 tablespoons plain flour (US: all-purpose flour)

750 ml (about 3¼ US cups) chicken stock

500 g (about 1.1 lb) potatoes, cut into 2 cm (¾ inch) cubes

1 teaspoon dried thyme

1 bay leaf

150 g (about 1 US cup) frozen peas

Salt and black pepper, to taste

Method

Pat the chicken dry and season lightly. Heat the oil in a large, heavy saucepan over medium-high heat. Brown the chicken in two batches for about 3–4 minutes per batch, adding a little more oil if needed. Transfer to a plate; it will finish cooking later.

Reduce the heat to medium. Add the onion and carrots and cook for 5–6 minutes, stirring. Add the garlic and cook for 30 seconds.

Stir in the flour and cook for 1 minute. Gradually pour in the stock while stirring, scraping up the browned bits from the bottom.

Return the chicken and its juices to the pan. Add the potatoes, thyme, and bay leaf. Bring to a gentle simmer.

Partly cover and simmer for 25–30 minutes, stirring occasionally, until the potatoes are tender and the chicken reaches 74°C (165°F) in the centre of the thickest pieces. Add a splash of water if needed to prevent sticking.

Stir in the frozen peas and simmer for another 3–5 minutes, until hot. Remove the bay leaf, taste, and adjust the seasoning. For a thicker gravy, simmer uncovered for a few extra minutes.

A little sunshine on the side: Serve in deep bowls with bread for dipping. In the US, Yukon Gold potatoes work well; in South Africa, choose an all-purpose potato that holds its shape when simmered.

3. Cinnamon Apple Crumble

The smell of apples and cinnamon drifting through the house is a good reason to turn on the oven. This crumble has a soft fruit filling and a buttery oat topping, lovely with custard or a spoonful of vanilla ice cream.

Serves: 6 | Prep: 20 minutes | Bake: 40–50 minutes

Ingredients

For the apples

900 g (about 2 lb, or 5–6 medium) apples, such as Granny Smith or a mix of Granny Smith and Golden Delicious

2 tablespoons brown sugar

1 teaspoon ground cinnamon

2 tablespoons water

1 tablespoon plain flour (US: all-purpose flour)

For the topping

125 g (about 1 US cup, spooned and levelled) plain flour

75 g (about ¾ US cup) rolled oats

75 g (about ⅓ US cup, packed) brown sugar

½ teaspoon ground cinnamon

A small pinch of salt

100 g (7 tablespoons) cold unsalted butter, cubed

Method

Heat the oven to 180°C conventional / 160°C fan / 350°F. Lightly butter a 20 cm (8 inch) square baking dish, at least 5 cm (2 inches) deep.

Peel and core the apples, then slice about 5 mm (¼ inch) thick. Toss with the filling sugar, cinnamon, water, and tablespoon of flour. Spread in the dish.

In a separate bowl, mix the topping flour, oats, sugar, cinnamon, and salt. Rub in the cold butter with your fingertips until you have a rough, crumbly mixture with a few small buttery clumps.

Scatter the topping evenly over the apples without pressing it down. Put the dish on a baking tray to catch any drips.

Bake for 40–50 minutes, until the topping is golden, the filling bubbles around the edges, and a small knife slides easily into the apples. If the top browns before the fruit softens, cover loosely with foil and continue baking.

Let stand for 10–15 minutes before serving warm.

A little sunshine on the side: Pour over warm custard for a comforting taste of home. Apple varieties and ovens differ, so use tenderness and bubbling as your final guide; the filling may take longer at higher elevations.

4. Cosy Cinnamon Hot Chocolate

For the evenings when all you want is a warm drink and somewhere soft to sit.

Makes: 2 mugs | Prep and cook: About 10 minutes

Ingredients

500 ml (about 2 US cups plus 2 tablespoons) milk or oat milk

2 tablespoons unsweetened cocoa powder

1–2 tablespoons sugar, to taste

¼ teaspoon ground cinnamon, plus a little extra to serve

½ teaspoon vanilla extract

A tiny pinch of salt

Whipped cream or mini marshmallows, optional

Method

In a small saucepan, stir the cocoa, 1 tablespoon sugar, cinnamon, and salt with a little of the milk to make a smooth paste.

Gradually whisk in the remaining milk.

Warm over medium-low heat, whisking occasionally, until steaming. Do not let it boil.

Remove from the heat and stir in the vanilla. Taste and add more sugar if needed.

Pour into two mugs. Finish with whipped cream or marshmallows, if you like, and a light dusting of cinnamon.

A little sunshine on the side: Put down your phone for the first few sips. Enjoy the warmth, the quiet, and the person beside you—or a peaceful moment of your own.

Warmth worth sharing

You do not need a perfect kitchen or an elaborate meal to make a cold day feel kinder. Sometimes an ordinary saucepan and a few simple ingredients are enough.

If you know someone who could use a little comfort, perhaps make an extra portion. A bowl of soup delivered to a neighbour, a warm dessert shared with family, or an invitation to sit down for hot chocolate can mean more than we realise.

May your kitchen be warm, your table welcoming, and your winter hold plenty of small joys.

Keep Packing Sunshine. 💛

What is the one winter dish that always makes you feel at home?
